Starter Discard Crumpets |
That's right, if you are stuck thinking, "what am I suppose to do with the rest of this starter?" and you don't want to throw it out. Have a go at these crumpets.

Ingredients are:
1 cup starter
1/2 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon sugar
Just mix all the ingredients together in a bowl or jug and set aside for 2 minutes.
Heat a pan (that you have a fitting lid for) on a med-high heat. For extra tastiness, season the pan with a knob of butter or a tablespoon of olive oil (but really a dry non-stick pan is fine).
After the mixture has been resting for 2 minutes, place spoonfuls of mixture into the pan and cover with the lid. Turn the heat down to medium setting.
Crumpets are ready when bubbles form and there's no more wet mixture on the top. As an option, at this stage you can flip the crumpets and leave for a couple of minutes to have a browned and crispy top too.
I also like to make pan-sized crumpets because well, why not? It's fun for the kids to have something bigger than usual - I just cut it into triangles to serve.
If you like your salty food, you can up the salt content to 1/2 teaspoon, I used to use that much salt but my partner didn't like how salty they were so now I use only 1/4 teaspoon salt.
We eat these crumpets with a bit of margarine topped with raspberry jam - delicious.
