Sourdough Starter Crackers |
Here's another recipe for using up sourdough starter discard. I quite like these moreish morsels and they are easy to make which is a bonus. I season them with Za'atar spice mix which I make myself but you can use store bought Za'atar mix or any other seasonings you like.

Ingredients:
370g sourdough starter
3g salt
115g white flour
90g wholemeal flour
70g olive oil
Za'atar spice mix
sea salt
Method:
In bowl mix together the sourdough starter, salt, white flour, wholemeal flour and olive oil.
Once a dough forms, knead the mixture until you get a firm ball.
Place half the mixture onto a non-stick baking sheet, baking paper or silicon mat and roll out to about 3mm thick.
Using a butter knife or pizza cutter, cut the rolled out dough into cracker sized pieces - making sure to cut all the way through to make it easier to separate the crackers once cooked.
Liberally sprinkle the crackers with sea salt and Za'atar mix.
Repeat with remaining dough.
Place crackers onto flat baking sheets and bake at 200 degrees celcius for 20-25 minutes or until lightly browned.
Remove from oven and allow to cool.
Crackers can be stored in an airtight container for up to a week.
TIPS:
If you have trouble with sticky dough when rolling it out, roll between two pieces of non-stick baking paper.
Watch the crackers closely when you first try making these, if you find that the crackers are cooking faster on one side of your oven, rotate the trays about halfway through the cooking time.
My Za'atar spice mix is made up of 1 tablespoon each of: sesame seeds, ground cumin, ground coriander, dried oregano and sumac. Just add all the ingredients to a bowl or jar and mix together then use.
