Jackfruit Pancakes |
This is the recipe I used to make Jackfruit pancakes. This experiment came about because my usual order of 12 x 400g cans of organic young jackfruit through the Ceres Organics food co-op arrived as a single can of 2.8kg!
I could have returned it but it would be easier to just keep it and challenge ourselves to a "Jackfruit Week"! Yep so here we go... the can of 2.8kg of jackfruit was split into 7 (or 8, I forget) airtight jars and kept in the fridge.
Anyway onto the Jackfruit Pancakes...

This recipe has the following ingredients:
1 cup Jackfruit
2 green cardamom pods
1 cup almond milk
1 cup flour
1 tsp baking powder
1 tbsp sugar
1/4 tsp salt
Blitz the jackfruit, cardamom pods and almond milk in a blender.
In a separate bowl mix together the flour, baking powder, sugar and salt.
Add wet ingredients to dry ingredients and mix thoroughly. This is the pancake mixture.
Heat a frypan on medium high heat. Add a tablspoon of butter to the pan.
Add spoonfuls of mixture to the pan - I used 1/3 of a cup.
Wait until they are half cooked and a few bubbles appears before flipping.
Leave to cook for a couple of minutes and they are done.
These pancakes look delicious but do not be fooled they are disgusting and I personally will not be making these again. A recipe to add to the failed experiment pile but I have provided the recipe here so you can try them out for yourself.
